Is three nights enough to learn to surf?

Enough to stand up on a foam board with a coach. Not enough to progress on your own. Two lessons on consecutive mornings is the realistic ceiling.

Should I sleep in Agadir on the first night?

Only if you land after 23:00. Otherwise do the 45 to 60 minute transfer straight away — it buys you the whole first morning.

Can I still fit a day trip in?

Yes, but it replaces a surf session rather than adding to the trip. On a flat or onshore day it is the right call.
